* tomato paste
* shredded cheese
* anything else you like – I like to add olives, sundried tomatoes, onion, garlic, oregano, basil and a touch of chilli.
Put your lebanese bread on an oven tray, or pizza stone if you have one. Smear tomato paste or pizza sauce across it.
Add your preferred toppings – sometimes it is good to put cheese on the base, beneath the toppings. This has the advantage of not trapping juices from pineapple etc. Top the pizza with pepperoni – this lets it crisp up and cooks out some of the fat.
So, I suggest in this order – pizza base, tomato paste, garlic, onion + basil. Then a layer of cheese, topped with ham, mushrooms, capsicum. Add your pineapple, olives and sundried tomatoes at this point, then put another layer of cheese and top with pepperoni and oregano.
Cook until the cheese goes stretchy (mozzarella) or starts to brown (cheddar). Then remove, slice, sprinkle with parmesan cheese and enjoy your delicious, crispy, fresh pizza.
