Chocolate Cheesecake Truffles

200g dark chocolate, chopped
250g cream cheese
¼ cup icing sugar, sifted
1 tablespoon Irish Cream Liqueur
1 x 200g pkt Tim Tam biscuits, crushed

  1. Place chocolate in a microwave safe bowl, cook on High Power for 40 seconds, stir, cook another 30 seconds, stir until chocolate has melted, cool.
  2. Beat cream cheese and icing sugar until combined, stir in liqueur and melted chocolate. Chill until firm enough to handle.
  3. Roll teaspoonfuls in biscuit crumbs. Refrigerate at least 24 hours.
